Jamie's Balsamic, Chilli and Honey Dressing

 Warm Roasted Pumpkin, Prosciutto and Pecorino Salad 

  • 1 small Kent pumpkin
  • sea salt and freshly ground black pepper
  • 1 small dried red chilli
  • 1 heaped teaspoon coriander seeds
  • 20 slices prosciutto
  • 4 handfuls of rocket
  • 4 tablespoons Jamie’s Balsamic, Chilli and Honey Dressing
  • 1 small block of Pecorino or Parmesan cheese, shaved

This is one of those easy salads with a twist.  You may have tried a prosciutto, rocket and Parmesan salad 
but by adding warm roasted pumpkin together with Jamie’s Balsamic, Chilli and Honey Dressing you add 
a whole new dimension.

  • Delicious served with your favourite steak.
  • In your stir fries.
  • With crusty bread and dukkah.
  • As a meat marinate.  

Jamie's Poppy Seed Dressing

 Marinated Warm Chicken Salad

  • 12 cherry tomatoes
  • 200g baby green beans
  • 1 small Spanish onion
  • 18 Kalamata olives
  • 8 chickens thighs oven baked, marinated overnight in Jamie’s Poppy Seed Dressing
  • 2 tablespoons chopped chives
  • sea salt and freshly ground black pepper
  • 1 carrot, peeled and shaved
  • 2 Lebanese cucumbers, sliced
  • 500g mixed lettuce
  • Jamie’s Poppy Seed Dressing to drizzle over finished salad

This is a really tasty salad, so tasty that you have to keep making it! It’s one of those combos that makes 
your mouth juice up.
 
Also try:
  • Pour directly onto a warm potato salad.
  • With your favourite seafood.
  • Great with mango and avocado or a simple tossed salad.  
 

Jamie's Red Wine and Herb Vinaigrette

Moorish Crunch Salad

300g carrots, peeled + sliced into matchsticks
150g radishes, sliced
2 crunchy eating apples, sliced
1 small handful of raisins
1 handful of fresh parsley, chopped
1 handful of fresh mint, chopped
4 tablespoons of Jamie’s Red Wine and Herb Vinaigrette
1 tablespoon tahini
sea salt and freshly ground black pepper
2 tablespoons sesame seeds, toasted

This is a lovely moorish salad which gets the tastebuds going. It is refreshingly crunchy and right at home 
with a barbecue
 
Also try:
  • With poultry or smoked salmon.
  • Brilliant drizzled over bruschetta and rocket.
  • Compliments a bean or pasta salad.

Prawn and Mango Salad

500g mixed lettuce
1 mango cubed
1 small red onion, sliced
1 avocado, cut into wedges
200g snow peas, blanched
1 bunch coriander, chopped
1 red pepper, thinly sliced into strips
1 punnet cherry tomatoes, halved
30 prawns, cooked
